
Mini tomato pizza with Red Desire
< BackIngredients:
For 4 small pizzas:
500 g Red Desire tomatoes
1 clove of garlic
4 tbsp olive oil
300 g pizza dough (ready-made, from the supermarket “chilled” section)
3 tbsp tomato passata
Pizza toppings:
4 artichoke hearts
4 slices of mortadella
1 tbsp pistachio nuts
100 g gorgonzola, in small cubes
100 g pumpkin cubes, fried in oil for 5 minutes
8 fresh sage leaves
1 tbsp walnuts, coarsely chopped
30 g fresh spinach leaves
4 anchovy fillets, chopped
2 tbsp capers
1 ball of mozzarella, shredded
Cut the tomatoes in half and place them in a bowl. Put the garlic into a press, and press out onto the tomatoes. Add the olive oil and stir everything together. Season the mixture with salt and pepper. Preheat the oven to 230°C. Divide the dough into 4 pieces and roll them out to make 4 circles about 10 cm in diameter. Place the pizza bases on a baking tray covered with baking paper. Spread the tomato passata over the pizza bases, and arrange the toppings on them. Then divide the marinated tomatoes over the pizzas and bake them in the oven. Make your own creation with the last pizza base. Bake the pizzas for about 5 minutes, until cooked and crispy.
