2 clovesof garlic, pressed
Italian herb mix
50 ml olive oil
200 g fennel
250 g RedStar Sublime tomatoes
Yellow and green sweet pepper, cut into squares
2 shallots, finely chopped 

Preparation method:

Preheat the oven to 180⁰C. Mix the pressed garlicwith the Italian herbs and olive oil. Coarsely chop the fennel. Mix the fennel with the tomatoes (cut into quarters), sweet peppers and finely chopped shallots. Add salt and pepper to taste. Put the mixture into a casserole dish and sprinkle with a little olive oil. Bake for approx. 45 minutesuntil cooked, stirring every 15 minutes. Delicious with fried mini-potatoes.
